Our “Champagne of the Month” for August 2018 is produced by Jean-Pierre Vazart who is based in the Grand Cru village of Chouilly on the Côte des Blancs.
Jean-Pierre is the third generation winemaker at the family domaine of Vazart-Coquart et Fils having been in control since 1995. He sustainably farms the 11 hectare estate, all of which is located within the village limits of Chouilly and has been certified Haute Valeur Environnementale (HVE) since 2012.
“Cuvée 82/12” is a champagne made using the perpetual blending method or solera; the numbers denoting the first and last year’s in the blend. Each year is added at a ratio of 40% and the wine is aged in fûts. It was bottled in April 2014 and disgorged in September 2017 with a dosage of 1.5gl, alcohol is at 12% abv.

Appearance: Pale, lemon.
Characteristics: Pronounced intensity with primary aromas of lemon rind, preserved lemon, grapefruit, chamomile, honeysuckle, Bramley apple peel, pear, gooseberry, pineapple, star anise, spearmint and a chalky salinity. There are secondary notes of butter, mature cheddar, toast, butterscotch and shortbread biscuit. Tertiary aromas include honey, hay, hazelnut, marzipan, walnut, cobnut and a subtle hint of coffee. It is medium bodied with a delicate mousse and long finish.
Whilst drinking excellently now, it does have potential for further ageing. “82/12” is a champagne that showcases Jean-Pierre’s winemaking talents whilst highlighting the excellent terroir of Chouilly. Inspired!
