Our “Champagne of the Month” for July 2018 comes from Champagne Vadin-Plateau, based in the village of Cumières in the Vallée de la Marne.
Yann Vadin has 7 hectares at his disposal in the seven villages of Cumières, Aÿ, Château-Thierry, Damery, Hautvillers, Pourcy and Venteuil. Since taking control of the family estate he has converted to biodynamic viticulture.
Cuvée “Ovalie” is a vintage wine born from the 2012 harvest consisting of equal parts Chardonnay and Pinot Noir. Two single plots (lieux-dits) in Cumières are used for the assemblage with the Chardonnay coming from “Chêne la Butte” and the Pinot Noir from “Bois des Jots”. Vinification takes place in concrete eggs with indigenous yeast and the second fermentation takes place under cork rather than a crown cap which is the more common method used today. The wine undergoes four years ageing on the lees before being disgorged without dosage. Alcohol is at 12.5% abv.

Appearance: Deep gold.
Characteristics: Pronounced intensity with primary aromas of lemon peel, preserved lemon, raspberry, apricot, green and red apple, chamomile, lavender, violet, flint, wet stones, gunpowder and grilled asparagus. Secondary notes of freshly baked bread, toast, sablé biscuit, butter and aged gouda. There are tertiary aromas of honey, hay, marzipan, caramel, walnut, toffee apple and tobacco. The finish is long and the mousse creamy.
This is an outstanding champagne, powerful yet elegantly poised and beautifully balanced. Whilst drinking excellently now it certainly has potential for further ageing.
