Our cuvée of the month for August 2015 comes from Tristan Hyest, a Récoltant-Manipulant located in the village of Trélou sur Marne on the western section of the Vallée de la Marne; where he has 2.5 hectares at his disposal.
His cuveé Iseult Rosé is labelled as a brut non-vintage but is in fact a zero dosage wine from a single harvest – 2008, consisting of 75% Chardonnay and 25% Pinot Noir. It comes from a single plot – “Courcelles” and is afforded 4-5 years aging.
It is a seductive salmon pink in colour and has a delicate touch with hints of green apples and pear, giving way to honey, summer red fruit such as strawberries and raspberries. It is summer in a glass!
