Our cuvée of the month for July 2016 comes from Champagne Guillaume Sergent, a Récoltant-Manipulant located in the village of Vrigny on the Petite Montagne de Reims. Guillaume has just 1.7 hectares at his disposal, the parcels being situated in the villages of Vrigny and Coulommes on the Petite Montagne de Reims and Chenay on the Massif de Saint Thierry. His two wines are released very young, just adhering to the legal mandate.
Despite its youthfulness Cuvée “Les Prés Dieu” is a complex wine, full of character. It is born from two parcels “Les Prés” and “Les Vignes Dieu”. The soil comprises of sand and seas shells similar to Kimméridgien found in the Chablis region of Burgundy. Vinified in fûts de chêne the wine does not undergo a period of cooling and is neither fined nor filtered.
A pale lemon colour, on the nose it offers autolytic notes of brioche and toast with oak hints of caramel and coconut. Green apples, dried fruit and baked pears are all evident. Flavours of fresh grapefruit, gooseberry, green apples along with delicate butter, vanilla, brioche, walnut and a faint hit of coffee balance well with the integrated lemon sherbet acidity; the sandy minerality and salinity come through at the end for a medium to long finish.
This champagne is a real joy, perfect as an aperitif or simply to enjoy on its own. It would pair well with creamy chicken/fish dishes or even good old fish and chips!
