Our “Champagne of the Month” for March 2018 comes from Fabrice Pouillon who is located in the village of Mareuil-sur-Ay in the Eastern section of the Vallée de la Marne.


Fabrice practices biodynamic viticulture in his 36 parcels which equates to 6.5 hectares in Mareuil-sur-Ay, Ay, Epernay and Mutigny. Ploughing by horse and the use of natural composts is just part of the process to ensure healthy and vibrant soils that will in turn produce the best quality berries and living wines. Yields are kept low in a continued pursuit to harvest the best quality grapes upon attaining maximum maturity. As with the all the greatest vignerons, keeping human intervention in the vineyard to the bare minimum maintains a healthy balance of biodiversity.


Fabrice produces a range of mono-crus champagnes, those from a single parcel and it is the 2007 vintage of “Les Blanchiens” (once known as blanc chien or white dog) that is our “Champagne of the Month” for March 2018. The parcel is located in Mareuil-sur-Ay where the soil is a mix of chalk and limestone. The wine consists of a 50/50 blend of Chardonnay and Pinot Noir which is pressed in a traditional champagne pressoir. Only indigenous yeasts are used for fermentation which takes place in small oak barrels ageing from new to 10 years old. Malolactic fermentation occurs during the second fermentation and this wine was without dosage. Disgorgement took place in the winter of 2014 and alcohol is 12%abv.

Appearance: Pale gold with a delicate mousse.


Characteristics: Pronounced intensity with primary aromas of lemon, lemon peel, blood orange, peach, nectarine, honeydew melon, pear, green apple and a chalky salinity. Secondary notes of vanilla, toast and butterscotch from the oak with brioche, short crust pastry from autolysis and beautiful aged Gouda from the malolactic fermentation. There are tertiary aromas of almond, marzipan, hazelnut, caramel and lightly roasted coffee from the deliberate oxidation and cinnamon, hay, honey and dried green apple from ageing. The finish is long and sumptuous.


This is an outstanding champagne, superbly poised and whilst drinking beautifully now, still has potential for further ageing.
