Our cuvée of the month for February comes from Champagne J. Lassalle from the Premier Cru village of Chigny-les-Roses on the Montagne de Reims.
This house and its 11 hectares of vineyards within the domain are run by a trilogy of women of the Lassalle family (grandmother, mother and daughter) and is in excellent hands, producing unquestionably good cuvées.
The Brut Préférence is the entry level wine made of equal parts Pinot Noir, Pinot Meunier and Chardonnay.
All cuvées are given ample time to mature, the Brut Préference given 5 years in the bottle and malolatic fermentation is allowed to occur. The original wooden press, installed by Jules Lassalle in 1942 still in use today and the same philosophies lain down then are faithfully adhered to. Rémuage remains a task to be carefully completed by hand.
This is a good example of a carefully nurtured grower -Champagne. It is not at all heavy-handed but has a refined complexity with a delicate hint of red fruits and a harmony between the three grape varieties. The finish remains long in the mouth.
The Brut Préference is a delicious wine and at just €16.00 per bottle is great value for money.
