Our “Champagne of the Month” for February 2016 comes from a small domaine in Rilly-la-Montagne: Champagne Hubert Paulet.
Winemaker Olivier Paulet has 8 hectares at his disposal, entirely based within the village which is located on the Montagne de Reims. The average age of the vines is around 25 years, 50% of the stock is Pinot Meunier and there is 25% each of Chardonnay and Pinot Noir.
The prestige offering – Cuvée Risléus was initially a wine made up of multiple vintages but is now a single vintage wine, this being from the 2002 harvest. Consisting of 47% Chardonnay, 33% Pinot Meunier and 20% Pinot Noir, vinification takes place in oak barrels; there is partial malolatic fermentation and partial bâtonnage. The wine is given 6 years sur lattes prior to 10 months post disgorgement. Dosage is around 9gl.
The fermentation in oak ensures a deep, intense wine, rich with vanilla, coffee, chocolate, brioche and spices. Beautiful.
