Our “Champagne of the Month” for December 2016 comes from the village of Baslieux-sous-Châtillon in the western Vallée de la Marne, on the north bank of the river; generally the home of rich clay soil.
Franck Pascal is certified Biodynamic with Ecocert and Biodyvin having begun converting the vineyards in 2000, turning towards natural wine production in harmony with the principles of bio-energy, a process allied to quantum physics. Bio-energy is extremely personal to Franck and his wife Isabelle whose lives as well as vineyards have become intrinsically rooted in its practice.
Only indigenous yeasts are used for vinification with little or no wood. There is no fining or filtering and no sulphites are added, relying on those occurring naturally for preservation. Minimal dosages are added, or none depending on the vintage which allows the wines to show us everything they’ve got. True pared back, naked wines, resplendent in all their glory.
Harmonie 2009 is a vintage wine combining a 50/50 blend of Pinot Meunier and Pinot Noir. Harvesting takes place twice to find the perfect balance between the terroir and the grapes. As stated, there are no added sulphites so the measured sulphite level is 42mg/l and the dosage is 2gl. This wine was disgorged on 16th October 2013 and alcohol is 12% abv.
Appearance: Pale, lemon with a lively and persistent mousse.
Nose: Pronounced aromas of red apple, raspberry, strawberry, violets, vanilla cream, cinnamon, hazelnut, cob nut, mango and banana with tertiary aromas of coffee, dark chocolate and cocoa bean.
Palate: Medium bodied with intense flavours of mango, blood orange, banana, passion fruit, raspberry, blackberry, hazelnut, almond, honey, cinnamon, coffee, cocoa bean and tobacco.
An outstanding champagne, wonderfully crafted with integrity and passion; utterly beguiling.
