Our “Champagne of the Month” for April 2018 comes from Champagne Ernest Remy, based in the village of Mailly-Champagne on the Montagne de Reims.
Tarek Berrada has 15 hectares under his control in the villages of Mailly-Champagne and Verzenay, the vast majority of which are planted with Pinot Noir and farmed sustainably.
Cuvée Oxymore is a vintage wine born from the 2008 harvest. It consists of 60% Pinot Noir and 40% Chardonnay from the estate’s best and oldest parcels in Mailly-Champagne. Alcoholic and malolactic fermentation takes place in old Burgundy barrels before spending a minimum of four years on the lees. Disgorgement is carried out by hand, dosage is 3gl and alcohol is 12% abv.

Appearance: Pale gold with a delicate mousse.
Characteristics: Pronounced intensity with primary aromas of lemon, orange peel, nectarine, pineapple, lychee, pear, quince and raspberry. Secondary notes of freshly baked bread, short crust pastry, aged gouda, cloves, nutmeg, butterscotch, cedar and toasted brioche. There are tertiary aromas of honey, ginger and hay, marmalade, dried apricot, marzipan, hazelnut, caramel and praline.
This is an outstanding champagne, wonderfully rich through the use of oak yet beautifully balanced. Whilst drinking excellently now it has potential for further ageing.
