Œnothèque: Our library of previous Champagnes of the Month

Our “Champagne of the Month” for December is the Cuvée Essentiel 2006 from Champagne Collard-Picard, based in Villers-sous-Châtillon in the Vallée de la Marne.


Essentiel 2006 is a vintage wine consisting of 50% Chardonnay from Vitryat in the Côte des Blancs and 25% each of Pinot Noir and Pinot Meunier. Vinification is entirely in oak foudres and there is no chaptalisation (addition of sugar at first fermentation stage) and no sugar added after the second fermentation to produce a zero dosage wine in every sense. Malolatic fermentation is avoided allowing this beautifully balanced, rich wine to show its full potential.


An intense gold colour with a very fine mousse giving hits of vanilla and toast. In the mouth; honey, caramel and apricot shines through, a super wine, bursting with flavour.
