Our “Champagne of the Month” for October is produced by Fabien Cazé of Champagne Cazé-Thibaut. Based in the village of Châtillon-sur-Marne, Fabien has 6parcels of vines amounting to 2.66 hectares in the village along with nearby Vandières. This is the right bank of the Vallée de la Marne famed in particular for its Meunier. Fabien also has Chardonnay and the plots are all worked sustainably, by hand and without the use of herbicides or pesticides. In the pressoir, grapes are pressed gently with the juice collected in stainless steel tanks via a gravity fed system. Spontaneous fermentation takes place with indigenous yeasts and a long, cold slow maturation process. Malolactic fermentation is not forced and the wines are not filtered.


Our wine in question is a single plot “Les Fourches”, positioned on a South facing slope in Vandières. The plot has sandy clay topsoil with chalky subsoil. Consisting of100% Chardonnay it is vinified in fûts de chêne and dosed at 2.5gl, it was disgorged on 24th January 2019 and sealed with a natural cork. The wine is born from the 2014 harvest despite not being declared as vintage.


Cazé-Thibaut “Les Fourches”


Tasted 17:45 Wednesday 25th September 2019 (fruit and sowing day in the lunar calendar)


Characteristics: Pronounced intensity with primary aromas of grapefruit, fresh lemon,tangerine, pineapple, mango, cantaloupe melon, quince, guava, papaya, star anise, passion fruit, green apple, mineral and chalk. There are secondary notes of vanilla, toast, brioche, butterscotch and sablé biscuit. Tertiary aromas include marzipan, caramel, dried apple, dried banana, hay, nutty, cobnut, hazelnut, honey and ginger. The wine is medium bodied with a delicate mousse and long finish. This champagne is drinking excellently now  it has potential for further aging. Fabien has been producing wines for just 6 years and is certainly another vigneron to keep an eye on, “Les Fourches” is beautiful.
