Our “Champagne of the Month” for November 2018 is produced by Antoine Bouvet who is based in the village of Mareuil-sur-Ay in the Vallée de la Marne.
After studying at the Lycée Viticole in Avize, Antoine began working for his grandparents’ estate – Guy Bouvet before taking over the domaine and launching his own label in 2013. In all, the estate covers 5 hectares with holdings in the villages of Mareuil-sur-Ay, Avenay-Val-d’Or and Bisseuil. For the entire range, vinification takes place in oak barrels with the use of indigenous yeast and the wines undergo malolactic fermentation. There is no fining or filtering and each cuvée is allowed a period in contact with the fine lees. Annual production is around 6,000 bottles.
The “Saignée de Mareuil” is a rosé champagne made using the traditional method whereby the grapes are macerated, on this occasion for a period of 36 hours. Born from two plots in the village of Mareuil-sur-Ay: “Faussard” and “Beguine”; both of which were planted in 1968 and consisting of 100% Pinot Noir. It comes from the 2013 harvest having been disgorged on 7th March 2017 with a dosage of 4gl; alcohol is at 12% abv. Just 490 bottles of this wine were produced using a single barrel.

Appearance: Deep, salmon.
Characteristics: Pronounced intensity with primary aromas of raspberry, strawberry, red cherry, blood orange, red apple, stewed apple, ripe banana, prune, kirsch, raspberry jam, rose and violet. There are secondary notes of bread dough, biscuit, toast, charred wood, cinnamon, cloves and aged mimolette. Tertiary aromas include hazelnut, marzipan, butterscotch, stewed plum, marmalade, cocoa, tobacco, game and forest floor. It is medium (+) bodied with a long finish and a delicate mousse.
Drinking perfectly now, it has potential for further aging.
Antoine Bouvet is a young winemaker who is already producing excellent champagnes. We look forward to tasting future cuvées and seeing how his career develops.
