Our Champagne of the Month for January and kick-starting 2014 comes from a super little domaine at Cauroy-lès-Hermonville on the Massif de St. Thierry: Champagne Francis Boulard.
The cuvée Blanc de Blancs “Les Vielles Vignes” is a non-vintage (2010 harvest) biodynamic Blanc de Blancs made from old vines consisting of 100% Chardonnay from a lieu-dit called “Le Murtet” which has sandy and limestone soil.
The wine is available both as Extra Brut (5gl) or Brut Nature (0gl); vinification on fine lees takes place in wood by means of fûts de chêne and old burgundy foudres. Spontaneous alcoholic fermentation takes place with indigenous yeasts and malolatic fermentation is allowed. Bâtonnage of the fine lees is carried out and the unfined wine is bottled on fruit days according to the lunar calendar.
It is deep, buttery and honey rich with hints of fine pastry - even cherry clafoutis and minerals.
