Our “Champagne of the Month” for March 2015 is the Cuvée Brut de Fût from Champagne Aspasie, based in the beautiful village of Brouillet in the Vallée de l’Ardres, approximately 20km to the west of Reims.
With 12 hectares of old vines the soil ranging from chalk to sandy limestone, Champagne Aspasie produces a very interesting range of cuvées including the stunning Brut de Fût.
Vinified in young oak barrels – fût de chêne, with an assemblage of 50% Chardonnay plus 25% each of Pinot Meunier and Pinot Noir; it is born from a single vineyard of their oldest vines. Rich, mature with an almost smoky intensity offering hints of spice, honey, toffee, vanilla and roasted coffee. This cuvée is aged for a minimum of 5 years in cool cellars to attain its complex maturity, undergoing light filtration with a low dosage of around 5gl.
